Alternate Start - Live Another Life will always be my favorite. It offers many start options for different characters and it still feels very vanilla+. There are also other mods that add additional start options, like New Beginnings and even one for Beyond Skyrim Bruma (the 4 part uploaded version) Alternate Perspective - Prologue Retold.
